Leah's Recipe: Salmon, Spinach and Cranberry Salad

These recipes use two of my favorite ingredients, spinach and salmon. Try them out! I love them together and I’m sure you will too!

Salmon

Ingredients:
4 Salmon fillets
2 Teaspoons fresh lime juice
2 cloves garlic, minced
½ Teaspoon Sugar
¼ Teaspoon chili powder
¼ Teaspoon cumin
1/8 Teaspoon salt
1/8 Teaspoon black pepper
4-6 Lime wedges

Mix together garlic, sugar, lime juice and spices. Evenly spread mixture over fillets and place on grill for 5-7 minutes, or until fish is flaky (or in oven at 450 degrees for 10-12 minutes in a non-stick pan). Squeeze fresh lime wedges on after taking salmon off the grill.

Spinach Salad

Ingredients (serves 4):
1 package (6 ounces) of spinach (washed)
½ cup of chopped pecans (toasted)
½ cup of dried cranberries
1/3 cup of olive oil
3 Tablespoons sugar
2 Tablespoons red wine or balsamic vinegar
1 Tablespoon of non-fat sour cream
½ Teaspoon dijon mustard

In container, mix oil, sugar, vinegar, sour cream and mustard. Cover with a tight lid and shake well. Mix spinach, pecans, cranberries and lightly drizzle with dressing.

one of my fave restaurants, this brazilian place in we ho, makes this, except it's warm spinach (slightly cooked) & it's absolutely scrumptious.

you're inspiring me to want to get back in the kitchen--i've been a bad woman, haven't cooked in almost a year :).

Leah, I do my salmon without the black pepper and add lime slices to the top before grilling. I love the chili powder and lime mixture. I also add a few fresh raspberries to the platter before going to the table to give a little burst of color.

Next time I make a salad, I'll definitely try the sour cream; sounds wonderful! Keep those great recipes coming.
