Tofu is a great source of protein, ideal for vegetarians and meat eaters alike. If you have yet to try tofu, keep in mind it generally takes on whatever flavor spices you choose to use, so feel free to be creative when cooking it. This recipe is a great combination of protein, carbs and a good source of fiber. Hope you like it!
Ingredients
- 3/4 cup brown basmati rice
- 1 1/2 cups water
- 1 tbsp olive oil
- 8 oz firm or extra firm tofu, drained and diced
- 1 cup English cucumber, diced
- 1 sweet red pepper, diced
- 1 green onion, sliced
- 2 tbsp lime juice
- 1 tbsp low sodium soy sauce or fish sauce
- 1/4 tsp hot chili sauce or hot pepper sauce
- 2 tbsp chopped fresh mint
- 2 tbsp fresh chopped coriander
Directions
1. In saucepan, bring rice and water to boil. Reduce heat to low, cover and simmer for about 20 minutes or until rice is tender and water is absorbed. Place in a large bowl.
2. In nonstick pan, heat oil over medium high heat and brown tofu, turning with spatula for about 6-8 minutes or until golden brown and crispy. Remove to paper towel-lined plate. Let stand.
3. Add cucumber, red pepper and green onion to rice. Add browned tofu and stir to combine.
4. In small bowl, whisk together lime juice, soy sauce and chili sauce. Drizzle over top and toss gently to combine. Add mint and coriander and toss again to combine well.

Wasn't a big fan of tofu
Wasn't a big fan of tofu until I had a vegetarian roommate who cooked it one night. Surprisingly I enjoyed it, I even started liking veggie burgers better.
Allow others to open your tastebuds. ;]
More Protein needed
I will give this a try. I need to add more protein to my diet. All the running is making me hungry 24/7 and I am getting tired of protein bars!

Sounds good! Hopefully when I try to make it the tofu will turn out (I seem to have a hard time cooking it for some reason). Maybe your instructions will help.:)
