I just threw together this awesome quinoa meal. You should give it a whirl! I was cooking for a couple of friends tonight on candida-restrictive diets (ie. no wheat, dairy, sugar, salt) and their first words were "Wow, taste!" Also, it was so easy that both of these self-professed hopeless chefs couldn't believe how simple this amazing meal is. Hopefully, you like it too! It only took about 20 minutes. It's healthy and tastes great!
Ingredients:
1 cup quinoa
2 cups water
2 chicken breasts
2 lemons
1 large red pepper
1/2 small onion
1/2 cup peas
1/2 cup corn
2 tablespoons of extra virgin olive oil
garlic (to taste)
dill (to taste)
Start by putting the quinoa and water in a sauce pan and cook on med-high heat until water is soaked in.
While the quinoa is cooking, slice chicken breasts into small pieces. Squeeze lemon and rub dill on the chicken and cook in a tablespoon of olive oil. Squeeze extra lemon on chicken as it cooks, if needed. Pan-fry until chicken is no longer pink.
In a separate pan, place a tablespoon of olive oil with diced onion, red pepper and garlic. Once cooked, add quinoa and cooked chicken, corn and peas. Add extra lemon and dill to taste.
The natural combination of the onion, garlic and pepper flavors mixed with the lemon and dill are amazing! Let me know what you think!
